Nut Slice
In the endless search for decent snack food for my kids I made this nut slice last week. It's choc full of honey and sugar, so I wouldn't call it healthy, but it's really delicious. It's definitely not for the nut allergic either (the name's the give away).

Preheat oven to 180 degrees celcius and line a tray with baking paper. Grind the following nuts into a coarse nut flour. Don’t whiz them too much.
• 1/2 cup cashews
• 1 cup of pumpkin seeds
• 1 cup of almonds

Put  them in a big bowl and add
• 1/2 cup of sunflower seeds
• 1/2 cup pf pumpkin seeds
• 1 cup of currants
• 1/2 teaspoon salt
• 1 teaspoon cinnamon

Melt in a small saucepan:
• 1/2 cup of honey
• 1/4 cup vegetable oil

Pour the honey/oil over the nuts then mix really well. Press evenly into the baking paper lined tray and bake for about 20 minutes, until lightly browned. 

Gently squish it back into shape when you remove it from the oven and allow to cool for about 20 minutes. Then, cut into slices and refrigerate.
